Apple & Blueberry Crumble

This healthy apple and blueberry crumble recipe is super easy to make and is refined sugar-free.  I love dessert recipes that can be enjoyed for breakfast too and this one definitely ticks the box.  Loaded with antioxidants and fibre, it will keep your tastebuds happy too.  Top with organic greek yoghurt to serve.

Ingredients

Filling

  • 1 cup blueberries, fresh or frozen
  • 1 teaspoon vanilla extract
  • 1/2 cup apple juice or water
  • 6 medium sized apples eg pink lady or golden delicious
  • 1/2 teaspoon ground cinnamon

Crumble Topping

  • 1 -2 tablespoons organic maple syrup
  • 3 -4 tablespoons extra virgin olive oil
  • 1/2 cup almond meal
  • 1 1/2 cups organic rolled oats
  • 1/2 teaspoon ground cinnamon
  • 1 teaspoon vanilla extract

Instructions

  1. Wash the apples, cut into halves and remove the core, then dice them up leaving the skin on.
  2. Place the apples into a pot and add the juice/water, vanilla and cinnamon.
  3. Cook over a medium heat for about 15 minutes, stirring occasionally, until the apples have softened.
  4. To make the crumble, combine the oats, almond meal, cinnamon, vanilla, maple syrup and olive oil then rub ingredients together with your fingers to combine,
  5. Preheat your oven to 160 degrees.
  6. Transfer the apple mixture to a bowl and combine with the blueberries. Then pile the apple and blueberry mixture into a baking dish, approx 18-20cm.
  7. Scatter the crumble over the top and bake for 30-40 minutes or until the crumble is golden.
  8. Remove from the oven and serve with thick greek style yoghurt.
