Apple Turnovers

The perfect wintery treat is these delicious and easy-to-make apple turnovers.  A great recipe to have on hand when you need to use up those apples sitting in your fruit basket.  Quick, easy and delicious!

 

Ingredients

  • 2 sheets thawed store-bought puff pastry
  • 1 tablespoon flour, for dusting
  • 3 -4 medium granny smith apples, cored and diced into pieces
  • 1 tablespoon unsalted butter
  • 1/4 cup brown sugar
  • 1/2 teaspoon ground cinnamon
  • pinch salt
  • 1 egg + 1 tablespoon water for egg wash
  • Icing sugar to dust when ready to serve

Instructions

  1. Preheat oven to 180 degrees celcius.
  2. Remove puff pastry from the freezer and thaw.
  3. In a medium pot, melt the butter over medium heat.
  4. Add the diced apples, stirring occasionally until softened, approx 5 mins.
  5. Reduce heat to low and stir in 1/4 cup brown sugar, 1/2 tsp cinnamon, and salt. Continue to simmer 3 minutes until apples are soft and caramelized. Remove from heat and set aside to cool.
  6. Use a rolling pin to roll the first sheet of thawed pastry to approx 11 inch or 27cms
  7. Cut into 4 equal sized squares.
  8. Place cooled apple mixture over half of each square, leaving at least a 1/2 inch or 1cm border.
  9. Thoroughly beat together 1 egg and the water. Brush eggwash lightly on edges of the pastry (just enought to seal), bring the edges together and crimp tightly along the edges with a fork to seal.
  10. Repeat stps 4 and 5 with the second sheet of puff pastry to make 8 turnovers.
  11. Transfer to a tray lined with baking paper, keeping them at least 1 inch or 2 cms apart.
  12. With a knife, cut 2-3 small slits in the top of each turnover.
  13. Brush the tops with the remaining egg wash and bake for approx 20-25 minutes or until golden and puffed.
  14. Allow to slightly cool before dusting with icing sugar.
