These donuts are just like the ones you buy in the shop. I’ve tried to minimise as much refined sugar as possible in the recipe and you’ll only see it in the cinnamon sugar coating, which you can replace with a monk fruit or stevia if you wish. The donuts are naturally sweetened with the dates so give them a try without the topping first. They are truly delicious and so soft!

Ingredients
Spiced Sugar Topping
- 1/2 teaspoon ground nutmeg
- 100 grams caster sugar or 50gms monk fruit
- 1/2 teaspoon ground cinnamon
Donut Mix
- 1/4 cup boiling water
- 185 grams gluten free self raising flour
- 2 eggs
- 180 milliliters milk
- 125 grams unsalted butter, melted
- 1 teaspoon vanilla extract
- 180 grams pitted dates, chopped
Instructions
- Preheat oven to 160 degrees
- Using a food processor combine all the ingredients until mashed.
- Place the dates and water in a small bowl and let it soak for 5 minutes.
- Spoon the mixture into a well greased 12 hole donut tray and bake for 12 - 15 minutes or until golden brown.
- If you don\'t have a donut tray you can use a mini muffin tray
- Remove from the baking tray and allow to cool on a wire rack.
- Prepare the Spiced Sugar in a bowl by combining the sugar, nutmeg and cinnamon until well combined.
- Toss the donuts one at a time into the bowl with the Spiced Sugar until they are covered with the sugar.
- Will keep up to 5 days in a sealed container.
