Ingredients
- 2 ripe bananas
- 1/2 teaspoon fine salt
- 2 teaspoons baking powder
- 1/2 cup almond meal
- 2 cups rolled oats (certified gluten free if needed)
- 1/2 cup sugar free maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup peanut butter
- 1/4 cup light olive oil
- 1/2 cup almond milk
- 2 teaspoons apple cider vinegar
Instructions
- Preheat the oven to 180 degrees celcius and grease and line a standard loaf tin with baking paper.
- In a mixer add the 2 bananas, milk, oil, peanut butter, vinegar, vanilla and maple syrup.
- Add the rolled oats, almond meal, baking powder and salt into the mixing bowl and mix until well combined.
- Transfer batter into the baking dish and top with an extra sliced banana and extra rolled oats (optional).
- Bake for 55-60 minutes.
- To test if the loaf is done insert a skewer into the middle of the loaf and it should come out dry.
- Leave the loaf in the tin for 5 minutes before removing.
- Allow to cool before slicing.
