Ingredients
- 1 store-bought cooked rotisserie chicken, (leave skin on)
- 1/4 teaspoon chilli flakes
- 1 package frozen stir fry veggies
- 2 eggs
- 3-4 tablespoons Tamari or Gluten free Soy Sauce
- 2 cups cooked white rice
- 1 garlic clove, chopped
- 1 red onion, sliced
- 1 teaspoon fresh ginger, chopped
- 3 teaspoons sesame oil
Instructions
- Cook your rice and set aside. Leftover cooked rice also works well with this recipe.
- Heat up a pan with a 1 tsp sesame oil and pour 2 eggs that have been whisked.
- Cook both sides then break the egg into small pieces with a wooden spoon and set aside.
- Heat up a wok with 2 tsp sesame oil and add your chopped veggies, garlic, ginger, and chilli. Cook until veggies soften
- Chop up 1/2 of the chicken into pieces leaving the skin on, removing the bones. Add the chopped chicken to the wok with the soy sauce and stir until well combined.
- Add the cooked rice, and chopped cooked egg to the wok and combine well.
