Chicken Fried Rice

This is one of those recipes that comes in handy when you have leftover chicken or for when you want to prepare something quick and easy.

Ingredients

  • 1 store-bought cooked rotisserie chicken, (leave skin on)
  • 1/4 teaspoon chilli flakes
  • 1 package frozen stir fry veggies
  • 2 eggs
  • 3-4 tablespoons Tamari or Gluten free Soy Sauce
  • 2 cups cooked white rice
  • 1 garlic clove, chopped
  • 1 red onion, sliced
  • 1 teaspoon fresh ginger, chopped
  • 3 teaspoons sesame oil

Instructions

  1. Cook your rice and set aside. Leftover cooked rice also works well with this recipe.
  2. Heat up a pan with a 1 tsp sesame oil and pour 2 eggs that have been whisked.
  3. Cook both sides then break the egg into small pieces with a wooden spoon and set aside.
  4. Heat up a wok with 2 tsp sesame oil and add your chopped veggies, garlic, ginger, and chilli. Cook until veggies soften
  5. Chop up 1/2 of the chicken into pieces leaving the skin on, removing the bones. Add the chopped chicken to the wok with the soy sauce and stir until well combined.
  6. Add the cooked rice, and chopped cooked egg to the wok and combine well.
