This yummy banana loaf has little morsels of chocolate oozing throughout it and the chia seeds give it a little protein boost. Great in lunch boxes, brekky on the run, or toasted with a little butter for afternoon tea.

Ingredients
- 130 gm unsalted butter, softened
- 100 gms dark chocolate, chopped
- 2 tap natural vanilla extract
- 100 mls buttermilk
- 1 teaspoon bicarbonate soda
- 1 pinch salt
- 2 teaspoons baking powder
- 220 gms gluten free plain flour
- 2 eggs
- 100 gms honey
- 3 ripe bananas
- an alternative to buttermilk: add 1 tsp vinegar to 100mls milk and let it sit for 5 minutes before adding to the mixture.
Instructions
- Preheat oven to 180 degrees
- Line a loaf tin with baking paper
- Place the bananas, butter and sugar in a food processor and mix on high until well combined.
- Add the eggs and mix on high for 10 seconds
- Then add the flour, baking powder, bicarb soda, vanilla extract, buttermilk and mix until well combined
- Fold through the chopped chocolates.
- Pour into the lined loaf tin.
- Optional to add 1 banana, sliced lengthways to decorate the top.
- Scatter with chia seeds on top
- Bake for 50-55 mins or until a skewer comes out clean.
