Crispy Flathead Tails

Flathead is a firm white fish and is low in fat, low in calories and an excellent source of protein.  The sweet mild flavour of these little morsels will tempt even fussy fish eaters.

 

Ingredients

  • 500 grams flathead tails
  • 2 eggs
  • 1 cup GF plain flour
  • salt and pepper
  • 1/2 cup extra virgin olive oil

Instructions

  1. Dry the flathead tails with absorbent paper to start with.
  2. Then beat 2 eggs with the salt and pepper
  3. Prepare the flour onto a plate
  4. Dip each flathead tail into the egg then coat with the flour and set aside.
  5. Heat up a frying pan with the olive oil until it gets hot.
  6. Add 2-3 flathead fillets to the pan at a time, cooking them on both sides until they turn nice and crispy.
  7. Remove from the pan and carefully place onto a plate lined with absorbent paper.
  8. Goes well with a Greek salad and served with lemon wedges.
