Hasselback Potatoes with Butter & Parmesan

Turn a humble baked potato into something very special, like these hasselback potatoes that capture all the deliciousness of butter and parmesan infused into them.  Serve them on your next special dinner as a side and you will definitely impress your guests.


  • 2 kilos white washed potatoes
  • 1/4 cup extra virgin olive oil
  • 50 gms butter
  • 50 gms parmesan cheese
  • Chopped parsley to serve


  1. Preheat the oven to 200degrees and line a baking tray with baking paper.
  2. With a sharp knife, make narrow slices into each potatoes, being careful not to slice all the way through.
  3. Place the potatoes cut side up on the tray
  4. Drizzle them with olive oil and season with salt and pepper.
  5. Bake for 60 minutes.
  6. Remove from the oven and place a dob of butter on top of each potatoes and scatter with parmesan cheese.
  7. Return the tray to the oven and bake for another 5 minutes.
  8. Serve with fresh chopped parsley.
