Ingredients
- 1 garlic clove, peeled and chopped
- Salt and pepper to taste
- 1 small tomatoe, diced
- 1 bay leaf
- 1 tablespoon bone broth concentrate
- 1 cup brown lentils, rinsed under cold water
- 1 carrot, peeled and chopped
- 2 celery sticks, chopped
- 1 onion, chopped
- Water to cover
Instructions

- small tomatoe, diced
- Salt and pepper to taste
- Water to cover
- Saute the onion, garlic, carrot and celery in a large pot with a little olive oil, until softened.
- Add in the lentils and stir through.
- Pour the water to cover the lentils and vegetables
- Add the bay leaf, bone broth concentrate, peeled tomatoe, salt and pepper.
- Cover and cook for 45 minutes or until the lentils have softened.
