Portugese Chicken Nibbles

The kids will love them and the adults will especially love them.  You choose to add as much or as little chilli or none at all, the taste is still incredible.  I serve these little chicken nibbles with steamed basmati rice because it’s low GI but you could also try some zucchini noodles, cauliflower rice for a low carb option or simply with roasted veggies on the side.  However you decide to serve them, they will be a guaranteed hit in your household.  Enjoy!

Ingredients

  • 2 kgs Chicken Nibbles (wingettes and drumettes)
  • 1/2 lemon, juiced, to serve
  • 1 cup water
  • 3-4 tablespoons olive oil
  • Salt & Pepper
  • 1 teaspoon dried Chilli flakes
  • 2 tablespoons dried Garlic powder
  • 2 tablespoons dried Oregano
  • 2 tablespoons sweet Paprika
  • 1 tablespoon chopped fresh parsley, optional

Instructions

  1. Preheat your oven to 180 degrees
  2. Place the chicken nibbles flat in a large oven dish
  3. Sprinkle both sides with the olive oil, salt & pepper, oregano, garlic & paprika.
  4. Add 1 cup water to the dish
  5. Place the baking dish, uncovered in the oven for 40 minutes at 180 degrees.
  6. Then take the dish out and toss the chicken nibblies over to the other side.
  7. Place it back in the oven and let it cook for another 20 minutes or until the skin is nice and crispy and browned.
  8. Serve with some chopped parsley, and squeezed lemon juice all over.
  9. Pair it with steamed basmati rice, cauliflower rice, or roasted veggies.
