Sneaky Veg & Beef Bolognaise

Most of us just aren’t having enough veg these days, so whenever possible sneaking them into recipes like this one, just means you’re adding to your 7 veg quota for the day.  This delicious veggie & beef bolognaise is loaded with nutrients and antioxidants, to help strengthen your vision, improve your heart health and aid in digestion and weight loss.


  • 500 gms Beef mince
  • 1 teaspoon pepper
  • 2 teaspoons salt
  • 700 grams bottle of Passata with Basil
  • 1 tablespoon Italian herbs
  • 2 garlic cloves
  • 1 onion
  • 2 small carrots
  • 2 celery stalks
  • 1 zucchini
  • 2 teaspoons tomato paste
  • 2 tablespoons olive oil


  1. Add the oil to a non-stick heavy based pot
  2. Then add the finely chopped onion, garlic, celery and carrot
  3. Saute until softened
  4. Then add the beef mince, breaking it up with a wooden spoon whilst stirring into through the vegetables
  5. Add the tomato paste and seasoning
  6. Add 1 grated zucchini and stir through
  7. Add the whole bottle of passata then add 1/3 full of water into the same empty bottle of passata, give it a shake then pour into the sauce.
  8. Allow the sauce to come to a boil, then stir, place the lid on and drop the heat to low to allow to simmer for 1 hour.
  9. Continue to stir the sauce every 10-12 minutes to prevent it from drying out and burning.
  10. If the sauce looks like it's drying out, add a little more water and stir through.
  11. Serve with pasta, rice or zucchini noodles.
